It’s that time of year again when Seville oranges are in the shops for a few precious weeks and you can make the most delicious tasting marmalade. I made my first batch last week and I have another batch to make this week. You can’t beat the smell of marmalade bubbling away in your kitchen.

I have to say I think I over-boiled it a little and it’s gone a bit too hard so I’m hoping I might be able to melt it down again and add some water. Not sure if this’ll work but it’s worth a try. Anyone ever salvaged marmalade in this way?
I use a Delia Smith recipe, which usually works as long as you keep an eye on it and don’t forget it like I did. Here’s the link to the full recipe.

Excuse the photos. Our camera has gone walkabout and in the mean time (I’m hoping it will turn up) I’m having to use my phone camera so quality isn’t so good
